Christmas Cake Using Black Treacle
The cake can be cooked perfectly well without it but it is the key ingredient that turns this from a good into a great christmas cake.

There s always so much christmas cake in our family dm 2 dsis and dsil all make them that the only reason i m considering making one is because of the tin of black treacle i have from last year. 2 tbsp black treacle 1 tbsp marmalade tsp vanilla essence 4 free range eggs lightly beaten 800g 1 lb mixed dried fruits 100g 3 oz chopped mixed peel 150g 5oz glace cherries halved 100g 3 oz blanched almonds chopped brandy b to decorate b 200g 7oz marzipan 1 2 tbsp apricot jam warmed royal icing 3 free range egg whites. And make sure you don t forget the black treacle.
Transfer the mixture to the prepared cake tin then cover the top with baking parchment and tie around the sides with kitchen string. A classic recipe for a fruity and slightly boozy christmas cake. Mix well until thick and well integrated. Add the fruit almonds spice treacle and brandy if using.
Grease and double line a 20 5cm 8in cake tin with greaseproof paper making sure the paper comes 5cm 2in above the top of the tin. Parkin is ace though i might just make that instead.
